AVANT means “before” or “ahead” in French. It is a word deep with personal significance for celebrated Singaporean chef, Haikal Johari. To him, “avant” is the process of looking back — drawing on his extensive experience — to advance or move forward with confidence and conviction.

The veteran chef’s tasting menu-only restaurant presents his culinary ambitions as a young cook, now enhanced by his vantage point today. AVANT is an intimate fine dining restaurant on the 30th storey of the Kimpton Maa-Lai Bangkok offering spectacular views of the city’s creative district. It sets the stage for Chef Haikal’s forward vision of a refined contemporary french experience with Asian sensibilities.

Our Chef

AVANT is helmed by Haikal Johari, the award-winning chef best known for his work in major culinary capitals, Bangkok and Singapore. The restaurant marks his return to Bangkok after close to a decade away.

At AVANT, he expresses contemporary French cuisine while drawing sensitively from the Asian culinary pantheon to craft an intuitive experience that resonates with diners. For him, hospitality is at the forefront of his culinary experience.

Our Cuisine

“Cooking is not about pursuing trends,” Chef Haikal observes. “At its essence, it is about thoughtfully rekindling sparks of happiness through food.”

That spark happens when the restaurant places the diner at the forefront of the experience. Here, chef Haikal expresses French Contemporary cuisine by skilfully incorporating influences — including Japanese, Thai and Singaporean — into classic French and European cuisine.

Varied as the influences may be, the driving force behind AVANT’s cuisine is Chef Haikal’s immense respect for the ingredients he works with. Here, Japanese produce holds court and each dish is conceived with provenance at its heart. This is made possible as the trailblazing chef has cultivated a network of farmers and suppliers throughout his career with whom he can handpick every ingredient with a commitment to quality, freshness and seasonality.

The result is an elegant seafood-forward meal that is simultaneously satisfying and balanced, showcasing Chef Haikal’s creativity at its finest and food that is truly before its time.
